We love tasty food. But we also try to eat as healthy as we can, and teach the boys to have healthy eating habits, as well. We don’t have picky kids. Did we get lucky? Maybe. But I think that it has more to do with the fact that the boys don’t have the option to eat junk on a regular basis. They eat what we eat. We talk to them about eating healthy and how it makes your body strong and happy, and they understand that. One of my main goals as a parent, is to show them that healthy food can also be delicious. And one of the main questions that I see on social media when it comes to eating healthy is “how do I eat healthy if my family doesn’t want to?”
My response is always “Do you do the grocery shopping? Do you prepare the meals?” If so, you have control of what is put in front of them at meal time. Healthy food does not have to be boring! And you shouldn’t be using your family as an excuse to continue to treat your body like a trash can. Make healthy food for them. Find a group of people who also make healthy food and swap recipes. Because so many people ask me about how to feed a family and create healthy meals that kids (and husbands) will eat, I thought that I would share some of my recipes that I keep in regular rotation.
Up first are Loaded Cheeseburger Meatballs. A few things that I think make preparing these a bit easier: Rather than using foil and cooking spray to line the baking sheet, I like to use these silicone baking mats. They reduce waste because they are reusable, and I find that they keep the bottom of the meatballs from getting too brown. I also really like to use a cookie scoop for my meatballs, so that I can get consistently sized meatballs.
