Recipe: Peanut Butter, Banana Nice Cream

Summer is upon us (soon, anyway), and it’s HOT here in Oklahoma. As a kid, I never really noticed how hot it got during the summer. As an adult, I hate being hot. I grew up in Arkansas, and unlike Oklahoma, the summer’s in Arkansas are huuuuuumid. Like air you can wear humid. At least in Oklahoma the wind helps to get rid of some of the humidity. Anyway, I digress.

Hot weather means cool drinks and cold treats. So, I thought that I would post my favorite recipe for guilt-free “ice cream.” With just a few ingredients and a blender, you can whip this up in minutes. I always have frozen bananas on hand for my Shakeology, so this is a super quick treat that I almost always have all of the ingredients for on-hand.

It’s easiest if you cut, or break, the bananas into chunks before you freeze them. I normally just use my hands and break each banana up into 4-5 pieces before I throw them in a freezer bag. You can substitute other mix-ins rather than chocolate, if you wanted to. Almonds or peanuts would be delicious. But peanut butter, chocolate and bananas is one of my all-time favorite flavor combos.

Peanut Butter, Banana Nice Cream

Peanut butter, banana and chocolate may be my favorite combo of all time. And I love ice cream, especially in the warmer months. This recipe allows me to have ice cream without any guilt. It’s so creamy and oh so good for you!

Ingredients

  • 3 bananas, cut into chunks and frozen
  • 3 tablespoons all natural peanut butter (or any nut butter)
  • 1 tablespoon no sugar added, dark chocolate chunks

Instructions

  1. Place everything in food processor or blender and blend until smooth
  2. Serve immediately, or place in freezer safe container and freeze for later.
